Christmas Paradise Cake

When friends come calling, be ready with this beautiful cake full of pineapple and bananas and almonds and flavored with cinnamon and almond extract. Finish off the top and sides with swirls of luscious Cream Cheese Frosting that has been kissed with a hint of chocolate. Serve it with coffee or punch to complete that warm feeling of Holiday hospitality.

Mix and sift:
3 cups flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon

Stir in 1 cup chopped almonds.

Beat 3 eggs slightly. Combine with:
1 ½ cups vegetable oil
1 teaspoon almond extract
2 cups chopped, firm bananas
1 8-ounce can crushed pineapple
, undrained
Add to dry ingredients and mix thoroughly, but do not beat.

Spoon into a well greased and floured 10-inch tube pan.

Bake at 325° for 1 hour and 20 minutes or until a toothpick comes out clean when inserted in middle.

Let stand for 10 to 15 minutes before inverting on a wire rack to finish cooling.

Cream Cheese Frosting

Soften to room temperature:
1 8-ounce package cream cheese
½ cup butter or margarine

Cream together with:
1 1-pound box powdered sugar
1 tablespoon instant chocolate
