Christmas Prune Spice Cake

Many people enjoy eating and sharing prune cake at Christmas time. In many homes, it is a family tradition. If you’ve never tried a prune cake, or you have never found a prune cake recipe you liked, you’re in for a treat. It’s moist and delicious.

1 ¼ cups cooked prunes
½ cup shortening
1 ½ cups brown sugar, packed
2 eggs, beaten
2 ½ cups sifted cake flour
½ teaspoon salt
1 teaspoon each:
baking powder
soda
allspice
cloves
cinnamon
½ teaspoon ginger
1 cup buttermilk

Cut pitted prunes into small pieces to make 1 cup pulp after cooking.

Cream shortening and sugar; blend in eggs.

Sift dry ingredients together. Add to creamed mixture alternately with buttermilk, beginning and ending with dry ingredients.

Blend in prunes and mix thoroughly.

Bake in 2 greased and floured 9-inch cake pans at 350° about 25 to 35 minutes.

Cool and frost.

Seafoam Frosting

1 egg white
¾ cup light brown sugar
2 ½ tablespoons water
½ teaspoon vanilla

Combine all ingredients except vanilla in top of double boiler. Beat with mixer 4 to 5 minutes or until mixture forms stiff peaks. Add vanilla.

    My dear Mom was a terrific baker, and she loved a variety of cakes. I remember this cake from my early childhood. Mom helped to educate my taste while we savord this unforgettable cake. Mom wrote it out for me, but for some reason, it wasn’t complete. It is safely stored now in my box of her other treasured recipes. I look forward to making this Christmas Prune Spice Cake this year, and will feel her with me while I bake, frost, and share with my family. Thank you for making this possible. Merry Christmas!

    This is the same as my mom made and unfortunately, I lost her copy, in her handwriting on a penny post card! I do remember that it had at least a cup of chopped pecans. We didn’t always frost ours. We ate it like ‘coffee cake’. Thanks for the recipe!
